La Ruta PDX and Toro Bravo Inc are importing an entire 500-pound Mediterranean Bluefin Tuna from sustainable Spanish tuna producer Balfegó for Portland, Oregon’s premiere Mediterranean Bluefin Tuna Week. Eleven chefs from John Gorham’s Toro Bravo Inc Restaurant Group will put their own twist on Mediterranean Bluefin Tuna dishes at their restaurants from July 27th-August 5th.

Sample free bites of the new additions to our regular menu, brunch menu, and brand-new Happy Hour Menu at Bless Your Heart in McMinnville’s Atticus Hotel on Sunday, July 1st from 3-5pm.
BYH Burgers will bring a fun, contemporary, and approachable concept to McMinnville in the Atticus Hotel in May of 2018. This second location of BYH Burgers will replace the initial restaurant concept for the Atticus Hotel, Third n Tasty.

We'd just like to take a moment to share our reasoning and thought process behind this, but to also address some of the questions we have received since rolling this program out.
From the authors of the Toro Bravo cookbook, here are recipes from Portland’s favorites, Tasty n Sons and Tasty n Alder, the restaurants that reinvented the brunch scene (and then every eating hour after that) with supremely satisfying dishes.
Toro Bravo would like to extend our gratitude to the Portland community for the support and patronage over the last ten years. We have gone from a Spanish-inspired restaurant to an institution that incorporates cuisines from all of the regions of Spain influenced by our many travels throughout the years that have inspired us.
We look forward to welcoming our guests into our newly remodeled, gaucho-inspired dining room, featuring new leather banquets, more comfortable seating, noise reduction, and a completely updated kitchen line with state of the art equipment such as planchas and a Josper oven. The alcove room (aka “the make-out room”) has been redesigned for an intimate face-to-face dining experience.
Look for updated menu items, an expanded sherry menu and wine list with a “From the Vault” section featuring rare and unusual wines from around the world with a focus on Spanish and Portuguese wines.

"We saw this opportunity to bring a more character to the Shalom Y’all concept and give our guests a more detailed experience that feels more like Israel.
The menu is going to change more frequently. You’ll be seeing more new menu items, more often, with a bigger approach toward salads.
BYH Burgers, the latest concept from Toro Bravo Inc, opens daily from 11am-10pm starting February 14th in the former space of Shalom Y’all in the Pine Street Market.

For more than a decade, the Oregon Truffle Festival has been the leading voice for a burgeoning American industry as well as an exciting culinary festival that sells out its popular dinners and tasting events year after year. Chef John Gorham is participating in two Truffle Festival events this year. On Saturday, January 28th at John will present Truffle Braised Beef Cheeks with truffled potato cream and “caviars” as the fourth course of the Grand Truffle Dinner alongside Chris Cosentino, Greg & Gabi Denton, Renee Erickson, and Aaron Patrick Adams. Then at 1pm on Sunday, January 28th John will give a 50 minute talk and Q&A at the Eugene Truffle Marketplace. Both events take place at the Hilton Eugene Playwrights Hall in Eugene Oregon.
